WAIT A WHILE !!

2017 Ehret Cabernet Sauvignon

Wow! Wow! Wow! I sampled this wine at a tasting back in June and loved it. I bought a bottle and opened it up tonight to enjoy alongside our burgers from Islands. This 2017 Ehret Cabernet Sauvignon by Ehret Winery was as wonderful as it was a month and a half ago at the tasting.

At 15% abv, this wine lands with a solid punch at the back of the throat, but in a totally good way! It has rich notes of black current, plum jam, vanilla, and cedar. Also, Cabernet Sauvignon is an excellent choice to pair with a burger because the tannins and acidity balance the fattiness of the beef, so that the wine and the burger emerge awesomely rich as a power couple as opposed to going stag as a lonely burger. That said, this wine definitely stands on its own. 

Like most Cabs, it is high in both acidity and tannin, which provides an even balance so that one does not overpower the other too severely. Even better, this Cab was partly aged in French oak, so we see a lovey Bordeaux-style essence in the wine. This is also represented in it’s Knight’s Valley AVA, which is cool in winter/spring an warmer in the summer and mimics the temperate/balanced climate of Bordeaux. (Some awesome Bordeaux-style blends come out of Knight’s County!)
